In 1999, Chef Raj arrived with little more than his grandmother's treasured spice box and a dream. That humble collection of hand-ground spices—cumin, coriander, turmeric, and a secret blend passed down through three generations—would become the foundation of Spice & Thistle.
What started as a small takeaway on the corner of Sauchiehall Street has blossomed into one of Glasgow's most beloved dining destinations. But the heart of our kitchen remains unchanged: those same family recipes, prepared with the same love and care that Chef Raj learned at his grandmother's side in Delhi.
